Pure Liquid Honey in Glass Jars.

Under this heading I find an articlefrom Mr. W. M. Hoge, who says thathe has invented a way of preparingliquid honey so that it will not congeal.He adds that this discovery will be beneficialto bee-keepers, and he explainshow we will profit by it. The tendencyof honey to candy, for all the adulteratorsof honey, has proved to be a greatimpediment; while, for the producers,it is a good characteristic, for it is thebest stamp that a bee-keeper can put onhis product—a stamp that the adulteratorsare unable to counterfeit.
Now that the consumers at large beginto give their preference to candiedhoney, the adulterators, seeing theirsales decreasing, try to invent somemeans to stop this result, and incite usto help them to continue their fraudulentpractice.
Let us remember that the candyingof honey is the best test of purity thusfar; that, by preventing honey fromcandying, we lower it to the level ofglucosed honey; and that, as long asliquid honey can be found on our markets,we will be compelled to competewith adulterated honey, for the profit ofthis adulteration will always tempt th
